Feel-Good Lentil Soup

Ingredients

  • 1/2 cup red lentil

  • 1/2 cup moong lentil (yellow)

  • 1/2 can crushed tomato 

  • 1 tsp sambhar curry powder

  • 1/2 tsp turmeric powder 

  • 1 tbs salt (or according to your taste) 

  • 6 cups of water 

  • 1 carrot medium size, diced 

  • 1 zucchini medium size, diced


Method

  1. In a medium pot add both lentils & water.

  2. Turn your stove on and cook it until it starts boiling (note: once it starts boiling, it will over flow, as if you are boiling your milk, so lower the heat and start stirring). 

  3. Boil on medium heat for about 10 minutes. 

  4. Than add your tomatoes, curry powder and turmeric - cook it with the lid cover for 5 minutes. 

  5. Once you start noticing your lentils are fully cooked, add carrot and cook for another 5 minutes (add 1 cup of water if you think your soup is getting thicker). 

  6. Add zucchini, then cook for another 10 minutes in a medium heat/flame. 

Please remember, the cooking times can vary according to your cooking gas / heating plate. If you think your soup needs extra time then please allow it! And make to your taste so you can enjoy :)
